This recipe was a test of substitute ingredients. (I know, scary when it comes to baking.) But, I think we can call the Banana Muffins a success by how quickly they disappeared.

Buttermilk Substitute for Banana Muffins

My favorite swap out was the buttermilk. I do not know about you, but I never have buttermilk on hand. There just are not that many uses for buttermilk in my cooking repertoire. That said, this recipe looked delicious and I had all the ingredients on hand to make it…well, most of them. The trusty internet taught me that you can “make” buttermilk with some milk and lemon juice. Of course I did not have milk either but I do always stock half & half. So I halved my half & half with water.

Buttermilk Subsitute = 1 Tbsp. lemon juice + enough milk to make 1 cup

There are loads of other ways to substitute for buttermilk. This page lists a few recipes. As my intro suggests the substitute was a success and the muffins were enjoyed by all. I used a recipe from EatingWell.com.
