This is one of my all time favorite holiday recipe memories. My mom made her delicious Green Dip for every winter party. It is a simple, delicious snack to have out when your guests arrive and you will want to make extra to snack on yourself after the party. But, bare in mind that everyone will have a little green in their teeth! Rinse that green away with a nice dry Grenache Rose from Niner Wine Estates.
- 2 packages frozen spinach, defrosted and squeezed (I use a dish towel)
- 1 c. fresh parsley
- 12 scallions (mostly green), lightly chopped
- 1 container chive cottage cheese (plain works too)
- 1 c. mayonaise
- Juice from 1 lime
- 1 tsp. salt
- 1 tsp. dried dill
- 1/2 tsp. dried basil
- 1/2 tsp. dried thyme
- 1 loaf french bread, cubed for dipping
Blend all ingredients except the bread in a food processor. You can also substitute fresh herbs for the dried by tripling the quantity. I also tend to go heavier on the cottage cheese and lighter on the mayo. For a lovely presentation buy a round loaf, hollow out the center to create a bowl and serve up your Green Dip in an edible package. Cheers!
